Question is there an alternative to cream? I am allergic to dairy but have goats product instead. Is there such a thing as Goats cream? I haven't seen any. I can't make most of the deserts in the EDC coz they have cream as one of the main ingredents!

Coconut cream would probably work if the coconut flavour is compatible with whatever you're making.

What's the EDC? (I know this will be a doh! moment when someone answers...)

Depending on the recipe, I use natural yoghurt (goat yoghurt is fine), tofutti (tofu cream cheese substitute), or coconut cream.

Goats milk does have cream, but not anywhere near as much as cows milk. I haven't seen it for sale anywhere, but if you could get some unhomogonised goats milk, maybe you could settle the cream off the top?

I was going to suggest silken tofu whipped in the blender.

Yeh, I'd go for a tofu, soy, cashew cream or other vegan alternative. Goat's milk has very little cream in my experience. We got raw goat's milk for over a year and it had like 3mm of cream on top of the bottle. Our cow's milk has like 10cm of cream all down the neck of the glass bottle!

Thank guys! Cashew cream? I was wanting to make chocolate toppings for cakes and ice cream in the TMX. I'll just have to do some experiments and hope they turn out ok! Sucks being dairy free!

If it's for cakes you could make mock cream with nut butter and cocoa and icing sugar. Mock cream is quite stable without refrigeration, too.

i use an egg and milk mix. more milk than egg cos you don't want scrambled eggs. i use it most with pasta, and the heat from teh pasta is enough to set the egg.

Bron, that sounds like a standard carbonara pasta sauce - milk and raw egg beaten together and tossed through hot cooked pasta.
