I've decided that from now on we are only going to be a wholemeal wheat family. And I'm trying to reduce how much wheat we do eat, but still trying to keep it in budget!
I want to make wholemeal pasta tomorrow, as I normally make our pasta anyway. So my question is can I use the same quantities as regular flour ie 100g flour, 1 egg, slurp of olive oil per serve? Does is need more moisture? I made wholemeal flour today with plain flour quantities and it needed a lot more liquid.
If anyone has experiences to share that'd be great! :)

I have used wholemeal spelt flour and it did need a little splash of water to get the right consistency. I made tons, and it was sooo filling.

Thanks Bel! That's what I was thinking. I'd love to make it from spelt so I'm heading to the next bigger town tomorrow to check out a health food shop there, ours is poo. Everything I buy in bulk or loose form from ours has weevils! I told the guy that owns it and he just told me to get over it and put the stuff in the freezer before we used it. So going to have a look somewhere else, even if it is a 25 minute drive away! I bought a 500g package of wholemeal spelt from the grocery and it was $10!!!

We make spelt pasta too. I tend to make it linguini or other wider pasta as the dough doesn't have as much stretch as the white flour dough. If I make spaghetti, they all end up like short noodles, and very fragile.
Mostly we use it for lasagne sheets and that sort of thing, where the aesthetics of the dish won't be compromised too much.

i bought khorasan flour for makng pasta with.... only used it for rotis so far though! cos have not made pasta for a few weeks.

I buy wholemeal spelt flour in bulk. Sometimes it's hard to get.
I always make fettucini or lasagne with w/m flour.

I was planning on going to buy some bulk stuff tomorrow (or at least look and compare prices to online) but the weather here is so windy and rainy I don't really feel like making the trip with the boys, the getting in and out of the car and getting wet I can live without!
I made the pasta today, it was sooooo yummy. I didn't add any extra liquid, although did add a fairly good lug of olive oil! The sheets were about 30cm long and were quite strong, none broke. A few got mangled when E turned the handle the wrong way, or wanted to see it coming out so pulled it too quickly, but that is cooking with a 2yr old! It was lots of fun!!!:yes
