Mum bought home one of those BBQ chooks from Safeway yesterday and I'm wondering what to do with the leftovers... (apart from eating it in the sandwiches that I'm consuming ATM :2lol)


It's funny whenever I hunt for recipe's I ALWAYS come across recipes for leftover chook but now that I have it I can't find a recipe for it :rofl

Any ideas?

My ex used to add it to satay sauce with vegies and serve it with noodles/rice.

I did quesadillas last night with a BBQ chook. Needed quite a lot of chicken though. Had planned a stir fry with the leftover meat (with oyster sauce - yum) but there aren't any leftovers! :(

There's a nice recipe that I got (from WW I think) many years ago, but it uses meat from a whole BBQ chook. Have to see if I can track it down again. Basically shred the meat, add a whole heap of chopped, lightly steamed broccoli, maybe pasta (???), pour over a cheese sauce (made in TMX or frypan :2lol), sprinkle 50g crushed plain potato chips over the top & bake in the oven until golden.

Risotto would be nice with left-over chook, too.

crushed potato chips are yummy. I do chicken nuggets rolled in them and baked. Delish!

Just make sure you eat it quickly enough - I can't remember how soon it's supposed to be eaten for sure, but think it's 24 hours or something? Not as long as if you roasted it yourself, anyway :)

sweet corn and chicken soup
asian chicken pancakes
sweet potsto & chicken rissoles
wings/legs in the kids lunch boxes
thats all i have atm

not so much as a recipe but;
sweet corn chicken soup -

shredd chicken
chop 1 onion fine
can of creamed corn or do it yourself
chrushed garlic(to taste)
veg or chicken stock(as much as you think you need to feed the family)
egg beaten
sesame oil
grated palm sugar(1 cube)
i fry off garlic, onion, then add stock, let it boil then add chick and corn.
let simmer for a few minutes, then add sesame oil and palm sugar, tstir in one direction so you have the soup moving and add the egg in a thin stream so if forms the "NOODLE" look(do not know how else to explain it

taste and add pepper, salt, sugar, oil to taste
i also add some chilli once i have pulled out the boys serve.

asian chick pancakes
I make a thin batter and just flavour it til i get that sweet salty bitter mix using garlic chilli, ginger, sesame oil, kaffir lime leaves ETC.
pour some batter into pan with some peanut oil and then when the bubbles start to form i add a pit of the chicken and turn once it has set a bit
seve with your fav sauce.

sweet potato & chicken rissoles
um just make up rissoles with chicken and mashed potato, maybe add italian herbs or asian or make it cheesy, i just mix up til i get the correct consistancy.
