Its pizza night and we are making baby bocconcini, basil and salami calzone.
The boys would like - Hayden ham & egg - Harry carrot, brocoli and cheese.
Oh and do not forget a little white wine!:wink2

pizza night for us a s well although willow has just turned her nose up at it and DH is asleep so it ppizza night alone for me and i dont even like pizza that much tomorrow night is yiros :yipi

We were going to be having rissoles and vegetables, but the hot water repair man turned up before we could get dinner on, and it's getting a bit late now. So it looks like it will be rissoles and eggs, maybe with some fruit as well.

Tonight is chunky veg lasange with a salad from the garden(lettuce, tomatoes corn, basil, mint, spring onions and boiled eggs from the girls)for us oldies and the kids are having some home mode chips on the side.

last night i made a lentil sauce, with loads of veges and a sauce of coconut milk, sour cream and a touch of organic tomato sauce to go with pasta. i made heaps so tonight, i'll beat up a couple of dozen of our eggs (many are bantam eggs so need a few more than big size chooky eggs) and combine it all and bake it.

We had a mix of regular vege pasta and rice/corn pasta, with a plain tomato sauce with peas and basil added. Quite nice, but too much sauce. If I can motivate myself, I'll prep vege lasagne for tomorrow night's dinner.

Ummm....I had the same thing I always seem to post about in this thread...basil crusted salmon with roast mini tomatoes. I ended up with one too many salmon steaks last time I made it, so I froze it with crust and all and just popped it in the oven when I got home from work (girls are at their dad's tonight), and popped some lovely toms in at the end, and voila - delish dinner!!

Now for my cheating -
1. I don't make my own pesto. I use yummy basil and macadamia dip and mix with fresh breadcrumbs.
2. If I'm feeling really lazy I just use squeezy basil and fresh breadcrumbs.

SO simple. And turns out you can prepare ahead and just freeze it. Too easy!

tonight we had turkey wing joints (they're as big as chicken legs and were only $2.50 a kilo!) which I baked in tamari, garlic and honey.
Rice with peas and corn on the side.

Amazingly, kids ate it all first time.

We had vegetarian rice paper rolls with noodles, avocado, tomato, red capsicum, and bean shoots in various combinations.

tonight is my easy night as dp has volleball so its pasta with anti pasto night!!
all from jars - olives, sundried toms, artichokes (in brine not oil), capsicum strips, grilled eggplsant and then garlic with gluten free pasta and maybe some nutritionsal yeast flakes on top. migt ad avocado to mine too.

I made myself some scrambled eggs with zucchini and carrot in, thinking that I'd make myself somethign more substantial later, but I'm sooooo fuuuulll....oh, and I put oyster sauce on it too. I'm putting it on everything at the moment :)

quark is very similar to cottage cheese, it has live cultures in it.

We had pesto chicken fettuccine. The pesto I made from our basil in the veggie garden and made it 2 mins before I added it to the chicken, nothing like fresh pesto. Yummmo

have spent all day in the kitchen today making lasagne's and fried rice etc for my son's 18th on saturday - so im definitely not cooking dinner!

Tonight we're having pizza from a jelly ring :)

I've got some left over wholemeal spelt bread which only lasts two days from the breadmaker, so it is a great way to use it up. You slice the bread and roll it with a rolling-pin.

You put in your top layer first, cheese for most.Then layer your ingredients, with about 3 layers of bread. We use diced tomatoes, capsicums, grated carrot, basil, pineapple, spinach, etc.

Finish with a layer of bread. Push all the ingredients down firmly and then put the lid on and put it in the fridge for the day.

When you are ready to cook it, you preheat the oven and turn the jellyring over onto the baking tray. Release the seal at the top and leave it for a few minutes. Usually the air gets in and the pizza pops out perfectly.

Then just bake until golden.

I think it is an old tupperware recipe?

Green prawns were on special this week, so most of them went into a pasta sauce last night (yum!) & I've got the dough rising for a prawn pizza tonight. I might even make some custard tonight.....hmmmmm

I am absolutely fascinated by this thread and in awe of you all. I will try to do better but tonight I am grabbing sausages out of the freezer, cutting up an onion to cook, making a kid friendly salad (well our kids anyway) of grated carrot, capsicum strips, grated tasty cheese and baby spinach leaves, wholemeal hot dog rolls and heinz organic ketchup (which redeems the menu slightly) and heading to the local park and having a BBQ! Complete with Beer for DH and I and a big bag of potato chips to scoff whle the snags are cooking. Trouble is "home" meals aren't much better at the moment LOL.

i used a chicken carcase to make stock and then made up some kind of rice, sweet potato thingy with it.... i was going to have homemade garlic bread on the side..... but in the end i ate four HUGE pieces of crispy bread dripping with butter and had some rice stuff on the side!

Meatballs in tomato sauce with garlic rice and home made icecream for dessert... then I whipped up a chocolate and avocado milkshake for DH and myself.

All made in the tmx! heehee

Coconut Chicken (tmx), rice, steamed green veg. Then off to a meeting where there was a delish dessert - 'ice cream' made from 100% banana - garnished with strawberries, kiwi fruit, chocolate mint leaves, stewed tamarillo and a couple of chunks of 70% cocoa dark choc. OMG divine!

balti chicken, rice, veggie stir fry and pappadums which is a miracle as i have pinched nerve in my neck and am in severe pain but on some wonderful painkillers makes me so high and happy and not in pain for a little while

tomorrow night whatever mum is making as she cooked for us and bringing it over tomorrow for us to give me a hand with the kids as the medication makes me happy but very drowsy

I have mushrooms in the fridge that need eating though.... maybe herbed mushrooms on savoury crepes perhaps.

we went out to the local for dinner, it cost us a staggering $130 and didn't even taste very nice!!!!!
DP, BS18, BS8 and I all had steak, chips, salad, DD's (both 10) had prawn spring rolls (only 2 each though and they weren't very big) and BS12 had fish and chips.
The price didn't even include drinks........

Basically rissole (meat, grated vegies) in bread (I toast ours), hamburger style (lettuce, tomato, cheese if can tolerate. We just have the plain meat and lettuce. Add homemade chive mayo. Serve with homemade wedges, coleslaw and homemade thickshake if you want (we just do the wedges). It's from the simple savers website. Hope it's ok to share here. I do have the full recipe.

and my dad dropped over just as we were dishing up so he stayed for tea ......the kids love that :)

ETA :rofl Oh we have McMummies here often But I have never heard it called that :2lol the kids don't like wedges though we have potato chips :)

we went to the IL's. We had roast lamb and vege, brussels, cauliflower, cabbage, broccolli, roast potato carrot and pumpkin and the IL's grow their own food and we had gorgeous tiny zucchini freshly picked. Yummo. It was great because both my kids ate more then they usually do and I was so shocked to see my baby sucking the marrow out of the bone. (kinda grossed me out) but yay!

Doing something with zucchini, carrrot and green lentils. Once that is cooked i'll do a mashed potato and sweet potato combination in the TMX as well and then make it into a sheppards pie type dish.

Aaaarrrggghhhh!!! the plan was to have steak for dinner, then Veg called me to say he is working late, by this time the steak was half defrosted so I thought no dramas steak tomorrow I'll make pork pork schnitzels sweet as... until now, when I go to crumb the schnitzels only to discover that the pork isn't pork it's diced blade....CRAP!!!! SO now I am trying to invent some kind of quick diced blade recipe that involves pasta....fingers crossed.....

We were going to have quiche, but I defrosted some pastry that I made and froze in July :gaspand it was all separated and gross (could be because its been in the freezer for 6 months, or that I left it on the kitchen window sill on a 35+ day!) so now we're having what we call frittata. Eggs, milk, veg (onion, brocolli, zuch, spinach) cooked in the oven. Easy peasy and both boys love it!

Ran out of white rice so used 50/50 white rice and red lentils in the rice cooker. Worked perfectly. Had that with a delish vegie curry (for the TMX users it's the Chicken curry from the EDC but sub the chicken for more veg - chop some up on speed 5 for a few secs if they don't fit in the jug and add more till you get the weight. Cook for a similar amount of time, depends how chunky your veg are cut if they cook or not (ie: not 10 + 15, but do 20 mins, then check, then 5 more if required).

Oh, to answer your question - veg curry, rice/lentil mix, natural yoghurt. Delish!

Korma paste in a jar. Pumpkin is pre-roasted: cut pumpkin in half, put on tray in oven at 180C for couple of hours til top of pumpkin is brown. Scoop out cooked seeds for chooks to eat. I cook with macadamia oil at the moment because we got it free from the IL's farm, but any oil will do.
My method is a bit hap-hazard.
Finely chop brown onion and fry in macadamia oil for a few minutes.
Add pumpkin and a hefty dollop of korma paste. Simmer for 5-10 minutes.
Add chopped fresh spinach (silverbeet). Simmer for a few minutes til it's cooked in.
Add a hefty dollop of reduced-fat cream and stir through.
Serve on rice with microwaved pappodams.

will do that in a few days time. Do you reckon the korma paste is worth buying? Do you ever make your own korma style sauce with spices?

i ended up doing something based on the fast chicken curry in the TMX EDC but with pumpkin and lots of vegies and with more of a korma style spice mix instead of curry. Will see how it goes shortly...

well, DS1 (E, 2.5) rubbed my menu for the week off the blackboard!!! I'm lost without it cause my brain is a bit fuzzy:blink at the moment so I couldn't for the life of me remember what I had on the plan for tonights dinner.

So at abou 2:30 I put the slow cooker on with Bel's Italian Lentils (from the slow cooker thread). I just chucked in whatever veg we had, celery that needed to be eaten, carrots, zucchini, mushies, yellow lentils, herbs from the garden, I'll stir through spinach at the end and serve with cous cous or pasta and parmesan cheese. I make the massive amount of the original recipe, and it makes enough for one dinner tonight, then another 3 dinners in the freezer plus some for dh for work tomorrow.
