I'm so sick of steamed vegies I need some inspiration how can Ispruce up the vegies we have with dinner?
Tonight we're having roast chook the Vegies I have are
Broc, cauli, carrots, parsnip, green beans, capsicums, zucchinis, onions,(brown, spring, red) potatoes
I need some help pleeeease!!!

um here goes:
roast the zucc & capscums in the oven with some oilve oil garlic and sea salt.
we love what i call flufffly potates(peal and cut in half so they will sit on baking dish flat and score the top then cover with a mix og oil and butter...they are crunchy on the outside and fluffly in the middle.
prsnip puree?
onions i would just bake til they are sweet
beans brroc, caul witha cheese sauce or a parma sauce

ooooh fluffly potatoes sound awesome!! Wonder if it would work with parsnips too? might give it a go....
the thing with cauli is that I cannot stand it!!! but the rest of the family LOVES it!!!
roast them :) mashed potato with garlic and lemon is so delicious!!

I have in the oven now fluffly potatoes (the kids were delighted when I told them what they were :2lol) and I'm roasting zucch, parsnips, and carrots, with dried herbs

When I do a roast chook, I like to do honey carrots. Steam them, but still keep them crunchy!
Then simply drizzle honey over the top (I like to use a good amount as it makes a nice 'sauce' once its melted), and mix through until melted.
The left over honey sauce is yummy drizzled over the chicken when serving :D
I do honey carrots too, but I'm lazy. I microwave steam the carrots, then put in a teaspoon of honey and little dab of butter, then toss together til the carrots are coated in melted mix of butter and honey. The kids love it.
For peas, try tossing steamed peas with just a little bit of finely chopped fresh mint or basil.
Potatoes are dead easy. I like mashed potatoes. Or colcannon - mix fried kale or cabbage and onion into the mashed spuds. When I make mashed potato, I use plenty of milk and butter so it's nice and creamy - which is how colcannon should be.
Another mashed spud idea: top mashed potato with steamed, finely chopped nettles (try kale or spinach instead if nettles are hard to get). Colloquially referred to as "turf". Divide it into little squares for eating. Nettles are good for unsettled tummies, and spuds are a good comfort food (well, they are for me).
Yet another spuds idea: Creamy baked potatoes. Not good for the hips, but Veg and the kids will enjoy it as a special treat.
And yet another spuds idea - can you tell what we eat a lot of? Mix cooked corn kernels and peas, and finely diced cooked carrots, into the mash. Kids love it. Or mash it together with a few slices of tinned beetroot so you get pink mash. Or with pureed steamed broccoli for Snot Mash. The things you do to get kids to eat vegies, eh?
Zucchini is easy too. Make zucchini fritters. You can make pumpkin and corn fritters too, yummy and sweet.
Oh, another spuds idea - thick-cut home made chips. We just roughly chop the spuds into fingers and bake. I like to steam first til almost cooked, then bake til brown.
And now I'm hungry. And it's your fault:D

I have made honey carrots before but Haze decided she didn't like them :blink
