I harvested two medium sized beetroot yesterday and have no idea what to do with them!
The only other time we've had fresh beetroot I've roasted it, but it's too hot for that now! Any suggestions for something fresh and yummy and not using many dishes as our dishwasher has just carked it! :2lol

Apparently it's quite good raw. I've never tried it though. :)

I haven't used this exact recipe but it is pretty much the same as the one I have used (which I can't find *SIGH*)

Roast vege salad with feta and then chill/cool it before serving?

I love it grated raw in a salad - yum!
You can turn it into a dip by steaming, then blend with creamed cheese or crumbled feta and cracked pepper.
You can also grate it and turn it into choc cake (follow zuchini choc cake recipe, or adapt a carrot cake recipe).

mmmmm, they all sound yummy! I also found a yummy looking beetroot orange and balsamic dish on taste that looked divine. I CBFed today so I'll take them down to mum's and make something exciting down there!

I have an awesome recipe for roast beetroot dip - it is delish! everyone always asks for the recipe :)
Roast beetroot and pumkin salad - chop into cubes and roast, then toss through rocket, feta, hazelnuts and dress w balsamic and oil. yummy!

Beetroot dip sounds good.
Really silly question but is beetroot in a can raw?! :blushing I love beetroot but this is the only way I have ever had it. I did try my hand at growing some this season but they all died :blushing I am going to hide now.

Beetroot in the can is cooked......everything in a can is cooked because it is heated during the canning process...... isn't it???

My beetroot didn't make it either Selenite! It is actually very different tasting to the can when fresh. Yummy!

LOL makes sense I suppose. I have just had a look and it seems that it is simmered and pickled. Either way I love it :)
Maybe I should buy some at the veg shop when I go in and see what I can do with it.

Yep, I'd say pickled and then 'cooked' when they heat treat the cans.
