View Full Version : Fried rice - anyone got a good recipe?

Ok - so yeah...I realise this is a dumb question as I know most people just "go with the flow" on this recipe...but you know...I have never made it myself and would like a little "direction" to save me making a major stuff up and no-one eating my food.

So....anyone got some direction for me? Or a link to a tried and tested recipe?

Yup I've got one it's brilliant it's from taste and I cook it at least once a fortnight. Easy fried rice (http://www.taste.com.au/recipes/15297/easy+fried+rice)

I use normal brown onions instead of shallots, cos I always have brown onions and I add peas and corn instead of just peas, and you may need more then 1 tablespoon of soy to season at the end...I think I'd use about 2-3.

My kids love this, it's awesome on it's own or served with meat

I just put a little oil in a large pan/wok and fry chopped onion. Add diced/sliced vegetables (celery, carrot, beans/peas etc) until just cooked.
Add cold rice and stir though gently to heat. Dash of soy sauce to taste if required. :)

The one recipe I do remember from my mother! :2lol

Oh yes... I put egg in but I tend to cook it separately and add it at the end... after I've taken J's serve out. ;)

I do have one will post it later as it is DPs recipe and is at home.

There is however I warn you, chinese sausage which is full of MSG and the like so you can omit that ;) or include it :P

No worries it's really easy, I can do it now without the recipe :2lol I cook the rice while I'm prepping the other ingredients

I just kinda make it up, nothing to special though but the kids love it. Fry off some onion, garlic and ginger (I'd do chilli too but E doesn't like spicy), then put the rice in, then put on some finely chopped veg that I've microwaved to soften, carrot, beans, brocolli, cauli etc, then put in a couple of sloshes of soy and some leafy veg bok choy or whatever.

The last time I did it we had it with marinated chicken legs (soy, garlic, honey, ginger) that I baked in the oven and I used the chicken baking juices as the sauce in the rice. It was extra yummy! :)

There are lots of different ways to make it - and traditional fried rice does not contain soy sauce - just salt, pepper and a sprinkle of sugar. You can use chinese five spice as well if that appeals.

I start by cooking the onion and the other veg (finely chopped cabbage goes great, and so do chopped bean sprouts, plus anything else that is dry when raw - seasoned with the five spice if you like), then push it all to the middle of the wok and (ensuring that the wok is well seasoned or oiled) pour the beaten egg around the high sides of the hot wok so that it cooks as it dribbles down. Then add the rice, to the wet stuff in the bottom and ensure it all gets amalgamated and broken up as it cooks. Add the salt and pepper and sugar and, if you like it soft, a tiny dribble of water to steam the rice through. Voila!

If you use soy, it still needs the sugar to balance it. Sugar is used extensively in asian cookery.

I had a Japanese flatmate who used to do it really simply with oyster sauce - no soy sauce, no salt, no pepper, nothing - and it would always taste great.

i have not clicked on the links but using rice that you cooked the day before gives you a much nicer rice IMO.

I think so too Chelle. Sometimes I use leftover rice that I've frozen and it's ok, but a bit more gluggy.

I use an electric fry pan and if adding egg to the mix I push all the rice to one side and cook the egg on the other side then kinda break it up with the wooden spoon. Quite often though I'll boil eggs and serve them on top cause then the boys know there is actually egg in it! :2lol

i beat up three eggs on their own and then pour it into a large flat skillet pan that has a tiny bit of olive oil in it and cook on low heat without touching it and then flip it over and turn the heat off after a minute and then let it sit until totally cool. Then i roll it up and slice it. and just stir it through at the end.

Wow, that takes planning!

Finished with sesame oil is another variation. Especially good with the dash of soy treatment. Yum!

when we went failsafe, i would cook off our sausages in the frypan first and cook the veges in there before adding the rice. it made it so much yummier :) the sausages were chopped into pieces and added back in at the end.
