after posting in the other thread i thought maybe we could have a vego version - might be some inspiration for those wanting to try a vego meal (or use up the leftover veg ;)), and for those of us longer term vegoids might help come up with some new ideas too!

for us tonight is my easiest night of the week as dp has volleball so its pasta with anti pasto night!!
all from jars - olives, sundried toms, artichokes (in brine not oil), capsicum strips, grilled eggplsant and then garlic with gluten free pasta and maybe some nutritionsal yeast flakes on top. migt ad avocado to mine too.

We are having "leftover buffet" which means there's stirfry, rice, vegies, potato, mushroom sauce, boiled eggs etc and people can serve themselves up whatever appeals. Baked beans on toast for anyone not interested in the above. Easy, peasy!

Giant portabello mushrooms marinated in tamari, olive oil, & rosemary, with a side of broccoli & brazil nut mash, all covered in a miso thyme gravy. Probably all sprinkled with nutritional yeast because I'm putting that on EVERYTHING lately. Well, not on fruit so much, but anything savoury. Yum. :)

the rest of my fam are eating kangaroo tonight, but I am having these super yummy vegan 'meat' patties. They are totally gormet adn will make a fake burger.

i have a fridge full of vegies, cans of beans, some rice, pasta, quinoa.....i have lots of stuff to cook with, im just bored with the same ol same ol ya know?

we usually do pasta one night, dahl or curry another night, burgers or falafel one night, Mexican one night, and then mix it up with vegan shephards pie, risotto, tibetan noodles ...im really not the best cook....its all nutritious just DULL

We had coconut curry stir-fry. Tofu, mushrooms, tomatos, bok choy, capsicum, rice noodles. Was just OK, made enough for two nights (which I always do) probably would have been better if I actually had coconut milk (woops) - used soy milk and some dessicated coconut instead.

I'm looking for new ideas too - I suck at improvising and I only cook things that are REALLY easy.

We had roast veggies (pumpkin, potatoes, carrot and beetroot) with couscous and chickpeas (mixed together and cooked in veggie stock). It is my easy meal when I don't feel like following a recipe :)

brocolli and brazil nut mash - more info pretty please!! Sounds like an awesome dinner. And what brand of nutritional yeast do you use? I've used it a few times but I just don't get it - taste like nothing at all to me?

Random - Quark is a European style cottage cheese, it's biodynamic and you can get it at the healf food store. It's kinda tangy, like spreadable natural yogurt almost...

Wednesday is when the Minister for Household Finance is home with the kidlets all day, so he usually BBQs dead animals for dinner. So I had leftover veg korma curry - jar korma paste with light cream and lots of vegies done in the slow cooker couple of days ago.

we were cooking for hubby senstive stomach after illness - so we had mashed sweet potato and potato mixed together, stemed vegies, and vegie sausages with mushrooms

I like the texture of the Sanitarium vego sausages, but the flavour is better in the other brand in the supermarket. I am suffering wine-induced brain-fry, so I can't remember the brand name.

I do like the taste of the Eatwell, but they don't hold together as nicely on the BBQ.

Tonight we shall have pumpkin, corn & pea vegie burgers on home-made bread. With Outback Spirit bush tomato chutney, it's my favourite tomato chutney but I have to go to Oxfam shop to get it cos the supermarket doesn't stock it anymore.

The mash is from Ani's Raw Food Kitchen book. Clove of garlic + cup of brazil nuts + salt & pepper in the food processor until powdery, then 2 cups of chopped broccoli. Whiz & done! So yummy with a good gravy.

We use Lotus Savoury Yeast Flakes. They're the only ones I like. I think they're the same as Red Star from the USA. Fortified with B12, too.

the dahl is organic but the roti is nasty......tasty tasty nasty food.....oops sorry i think i lost my train of thought :)

Last night was Thai-style braised faux-beef & vegetable & cashew stirfry made by DH. He took cooking classes in Chiang Mai, so I don't mind letting him cook occasionally... Tonight it's mushrooms & broccoli mash with gravy again! Hee hee. I love that stuff.

Thanks - must get some brazil nuts and try that mash! I've tried raw fresh brocolli in a smoothie but it burns my throat for some reason, raw frozen brocolli is fine though. Will give it a go though.

I had a clean-up/washing day today so we're having vegie lasagna from the freezer and frozen chips (actually I ate it at 4pm because I was already hungry :))

We made Pizza, Ruby made hers - spelt base with tomato, carrot, pepitas, olives, cottage cheese and cheddar cheese.
And I made mine - mushroom, asparegas, olives, cottage cheese, cheddar cheese and pepitas...mmmmmmm

i just made the best udon noodle stirfry ever (even if i do say so myself!) full of cabbage (not sure what kind but out of the garden with a slight peppery tang), silverbeet, carrot, zucchini, mushroom, onion, brocolli (incl the stems cos i reckon that's the best part), and, my secret ingredient, pawpaw!!! yum yum yum yum yum

hubby is in the kitchen cooking some Shimpu Kwa ( nepalese curry based around coconut milk and red kidney beans...it doenst sound that thriling but its awesome......mmmmm im excited :)

pizza tonight - used hummus/brocolli blended together for a "green" pizza sauce, bit of pasta sauce on top of that, then tomatos, red onion, capsicum, olives. Yum. Made about a million little containers of green sauce for the freezer too.

Four bean mix, baby spinach, and shallots baked in the oven with a mild indian curry sauce, served with rice cooked in vegie stock. Mmmmmm, even the carnivores in the house should like this one! :laugh

did the pumkpin and lentil curry. Was quite tasty. I think it would go nice with a rocket salad or something but could not be arsed to run out to the garden in the rain. :)

Recipe for slow cooker potatos is - saute 1/2 onion, add to slow cooker along with 2 cloves garlic, 1 tbsp, parsley, 1tsp salt, 8 potatos thin sliced, 240g tofutti cream cheese. Cook on high 3-4 hrs.

I double it but still just use the 1 packet tofutti and add soy milk to it to make a bit of a sauce.

Am going to try those slow cooker potatoes. Don't have any tofutti, but I do have a packet of light cream cheese so will give that a go.

Tonight we're having coconut curry vegies with rice. I cut up all the vegies yesterday, and it's a pre-made sauce, so will only take a few minutes to stir fry the vegies, add sauce, and heat through.

Excellent idea! We have been eating from the freezer a lot lately but I'll try this approach as well. Start cutting veges up and if the days starts to go downhill I can stick it in the fridge to finish off the next day :D.

we had dairy free quiche ( sorry vegans- we are only verging on vegan ...im dairy free vego - we have backyard hens, so we use their eggs) made with organic eggs from our chookies and herbs from our garden served with a salad which featured rocket from the garden! whoot!

i am also very excited about finding vegetarian jelly crystals in the organic shop today :)

I think I posted in the other thread, but we had a very quick curry made in the TMX (chickpeas, lentils, onion, chilli, curry powder, homegrown spinach, etc) over rice made in the rice cooker (you'd think I like gadgets, LOL) with green peas and natural yoghurt (made from our own cow's milk). Mmmmmmmmmm and so quick!

i did the grocery shopping today minus the kids so i got to browse! LOL! I checked out the Indian section and read all the packets of the pre-made stuff. Indian food seems to have the best vegetarian stuff :) yummo.... Then i splurged and bought some paneer cheese... So next week's menu will now have some Indian delight with chickpeas, potato, and spinach (got lots of those things).

I made "the night before the organic box arrives" soup :) So, it ended up being- red lentil, potato, asparagas, zuccini and corn soup. Whizzed up before serving. was a funny colour but actually tasted pretty good :) With sage and onion toast.

we had dhal and pumpkin chickpea curry made with coconut milk ( drool) but i think the spinach in the dhal ( which i nearly put in the chook bucket, but went...nah, its still ok...) was a bit cruddy and im feeling all yuck in my tummy now......damn it....

Ick, T. When I have heaps of spinach I shred and freeze it. Then I pop the frozen block into what I'm cooking.

I process and freeze quite a few veg when our co-op boxes come, to avoid waste. Always veg in the freezer then, for non-co-op weeks.

No, Bel, they are pretty big letters, multicoloured though. They were reduced to clear for $1 a packet at coles, so I bought 5! Funny when we have guests over though, serving up alphabet shaped pasta!

YUM mamma! Tonight is falafel with rice and some sort of sauce it says on the menu. The sauce has me stumped... The rice is so the little kids will eat. I'll probably do a bowl of steamed vegies cut up small too, for on the side. The sauce... Hmmm?

Ah, perfect B - vegie sticks. I'll have to look at what ingredients I have for the sauce. We normally have flat bread, salad, hommus, falafel. But for some reason it's on the menu with rice for something different and I was a bit stuck!

We had couscous, falafel, plum sauce (a bottled one from Outback Spirit) and steamed vegie sticks in the end. Worked well. :) Dunno about the rice, couldn't get it to work with falafel.

am making an indian inspired chickpea, potato, spinach curry for tonight with homemade bread.

Last night had a simply, but yummy, udon and vegetable stirfry.

Night before i made a noodle quiche which i have not made before (photo on my blog) and it was surprisingly good. Had a friend over and we both decided it was certainly something you could take to a dinner party or something that looked impressive as well as tasted good (looked better IRL than in the photo! LOL!) and was incredibily easy and cheap to make.

ETA- i have to remember that pumpkin and walnut pasta thing.... will make that soon!

We had a mexe bake in the slow cooker - in it was zucchini, eggplant, chili, tin of tomatoes, 2 tins of kidney beans, onion, garlic, veg stock paste, herbs, paprika with mountain bread and grated cheese layered in the slow cooker. Served with steamed sweet potato, cubed, from the garden, a green salad and some sour cream. I wanted avocado, but someone ate them all when I wasn't looking! Oh, and some Thomas Chipman corn chips as well ('dipping' them gets the kids eating the mexe beans. ;)

Actually, I spent most of the day eating fresh fruit to break my bread habit.
But for dinner, we had fried mushroom and onion with a little (vego) worcestershire and salt & pepper on toasted fresh-baked bread, with steamed broccoli and mashed potatoes. I got a 2kg box of cherries this morning, so I didn't feel like I needed much to eat tonight.

I just got co-op boxes - 2kg mushrooms, 4 bunches of asparagus, 5kg carrots, 10kg potatoes, 3kg broccoli and 8 punnets of strawberries!? All organic.

On the menu for tonight is a stir-fry to use up what's in the fridge - wombok, eggplant, capsicum, carrot, broccoli, zucchini, beans - lots of it from the garden. Will now be able to throw in loads of mushrooms. Might go for a bit of a chilli-ginger flavour. Not sure what sort of rice to do...

i made some fresh tomato + herb pasta sauce last night (cos i had lots of tomatos and don't usually cook with them so they were getting super ripe) and we'll have that with some parmesan and eggplant 'meat'balls that are super yummy but fiddly to cook the old fashioned way but i know they will be crazy-easy in the TMX.

I'll make Darcy a zucchini sauce to go with his instead of the tomato.

i have the original non-TMX version on the computer somewhere... or might be on my blog, i'll look. Made notes to convert to TMX today but i seriously did it arse-about. I am not used to the order of things yet and ended up already having the eggplant in before i had cooked the garlic, so i took it out... then realised i should have done nothing until i grated the cheese to put to one side! LOL!

Am eating them now. yum. the kids however rejected them. hhmmm. i thought they would like them but they are having jam sandwiches :shrug

I always, always forgot to do the cheese first. Now I grate 1kg of cheddar and 500g of parmesan, put it in containers in the fridge. It keeps fine, doesn't cake together and is there when we need it. I have frozen it fine too. I do it on the same day - grate and grate and grate and then clean the tmx. Ten mins and it's all done and tidied away. Love it.

I did 1 kg yesterday Madi on speed 8 for around 5 secs... depends on how fine you want it. :)
Just remember no more than 250g of softer cheeses at a time and chop them smallish. Limit is 150g parmesan at a time too. ;)

Yep, cube it and do it in batches.

I don't know the settings, but approximately as SM described sounds about right. You watch through the MC to see what texture it's at.

split pea dahl tonight. Pretty crap actually...bland and overcooked. Anyone have a recipe they like? I've had take-away split pea dahl and it was awesome :(

Leftovers - so pizza rolls, rice, stir fry, fried eggs, toast, salad, cheese, ricotta, tamari - all on the bench for people to pick and choose. I love when the Dad is on afternoon shift! :)

Tonight's dinner - lazy risotto.
1 cup arborio rice
1/2 large brown onion, diced
two handfuls mushrooms, sliced
1 teaspoon Massel chicken-flavoured vegie stock powder
handful dried grated beetroot (bought from an organic Asian vegie stall at the farmer's market)
2 1/2 cups water
30g margerine
Salt and pepper to taste

Preheat oven to 180C
Put everything except the beetroot, salt & pepper, and margerine in a casserole dish. Dot the margerine over the top. Put the lid on, bake for 45mins til all the liquid is absorbed into the rice.
Stir in the beetroot and salt & pepper before serving.

This one reheats well too. Might try making arancini balls with leftovers.

Thanks for this recipe emd! Will try this one next week. Might leave out the beetroot and maybe add spinach.

It's great with spinach, that's what I usually use. Or frozen peas, or fresh green beans chopped into small pieces. Also good with diced raw pumpkin or sweet potato instead of mushroom and spinach.

The beetroot version turned out very nice indeed - great mix of sweetness and salt. Will definitely do it again - even the girls ate some!

went to a thing last night and the range of food was to die for! I need to find recipes! Had a great rice+noodle salad that had whole grain things in it and was nothing at all like a 'salad' but was just incredible. And little rissole maybe falafal type things that i got no clue about but i could have had another couple but they were all gone. And a great baby spinach, pumkpin, feta thing that i never make cos i don't splurge on feta anymore! ROFL! yum yum yum yum yum

Sounds like a feast Michelle!

Tonight for us, a nice big pot of wholemeal fettucine with a tomato-based sauce FULL of lentils and vegies, garlic and herbs. Mmmmmm. Topped with grated cheddar or parmesan to taste, and probably a green side-salad.

made a variation of the tomato lentil dahl in the TMX book for dinner tonight (added zucchini and capsicum) and it was really yum. Made my own naan for the first time to go with it and although the first two bread i made were a little thick the next two were just perfect. Will make that again for sure.

Made this tonight, not bad, think I over-cooked it though, I've made this sort of oven risotto before and never seem to get the texture right. I made double the recipe so think I might freeze some and see if I can make risotto balls from the frozen batch. Will definitely try the pumpkin variation and maybe som sort of tomato/olive type too - thanks!!

If it's not coming out the right texture, try turning the temp down just a touch and cooking for longer if necessary. This will stop it drying out too much (if that's the problem).

Well, I think it was the opposite problem, bit too mushy/gluggy does that mean I should try a hotter oven for a shorter time?
