I tend to be a bit boring with mince- spag bol is pretty much it, and one of my boys in particular is a bit sick of it (the others still scoff it down so I'll keep cooking it!)
Anyway I think I need to expand my repertoire...I am looking for inspirational recipe ideas for mince please!

We use spag bol mince for lasagna and taco's as well as spaghetti. Mince is also good for rissoles, savory mince stew, pies/sheppard's pie. I love mince. :)

all of the above plus chilli con carne on rice/pasta/jacket potatoes.

Short of time but here are some things I do with mince let me know if yo need recipes :)
Stuffed capsicums
Stuffed eggplant
Hamburgers
Mexican lasagna
Shepherd's pie

Great! Kyls- they all sound fab but I just happen to have some eggplant here, so maybe the recipe for that one please :-)

Alright I found the recipe in an old school 80's cook book the book calls it Moussaka but I don't think it is...it's a bit fiddly but everyone here loved it (cept for me cos I'm not a big fan of eggplant :2lol)
Slice eggplants in half sprinkle with salt and leave for 15 minutes, rinse and pat dry
Dice an onion and some garlic and mix with the mince, (you can also add some bacon too )add to frying pan and saute.
Shallow fry eggplants flesh side down until golden brown drain on paper towels, scoop out flesh and add to cooked meat along with an egg mix well.
Spoon into shells of the eggplant put on an oven proof dish add a wee bit of pureed tomato sauce to each eggplant, and then grate some cheese over the top you can add breadcrumbs too I guess put in oven on 180 for 30 minutes

Am making it right now so I can just pop in the oven later! I bet it is going to be yum, have added some finely diced mushrooms and grated carrot to the mince too :-)

look on taste.com.au. They have a great recipe for porcupines, swedish meatballs and beef and kumara parcels. All great mince dishes (that haven't been mentioned yet :) )

Oh man I forgot about porcupines! Have not had those in ages...maybe on the weekend! And I do love Swedish meatballs too. I have taste.com bookmarked but find the recipes a bit hit and miss (the Swedish meatballs one is good though!). Love to get personal recommendations :-)

san choy bow is my favourite and I just use regular beef mince. One of my children won't have it rolled in the lettuce so he has his in a burrito instead.

I've always wanted to try san choy bow it looks really yummy but Veg never seems interested...any one got a recipe?

I've used the one on taste and that is OK
Brown the mince
I do mine with 1-2tablespoons of hoi sin sauce from Ayams and 1-2 tablspoons of hois sin sauce from another brand that is a completely different colour (more reddish) but can't remember the brand. Then a bit of oyster sauce too.
Half a pack of rice vermicilli noodles that have been soaked in boiling water, drained and cooled. Chop into smaller pieces, add to the mince.
Splash of fish sauce
Finely chopped water chestnuts added stir for another 2 minutes
Sprinkle in a few handfuls of chopped shallots and torn coriander stems and leaves and crushed peanuts before serving in lettuce cups
Sometimes I add mushrooms too or garlic or ginger and DH always adds finely sliced chilli to his serving.

Jamie Oliver's Ministry of Food book has a great meatball and pasta recipe, mince, breadcrumbs or crushed up crackers, egg, mustard, rosemary. Serve it in a basic tomato pasta sauce with spaghetti, yum! A bit different to spag bog too!
We do all of the above as well, I love chilli night!

yeah i make it with chicken too, or lamb, or a combo, but beef mine is my favourite
I'll admit to still loving a good meatloaf too, brings me back to my childhood
