anyone have a killer carrot cake recipe for TMX?

i need to buy more TMX recipe books i think.
i found these two recipes A Swiss Almond & Carrot (http://www.ukthermomix.com/recshow.php?rec_id=45)cake and a regular Carrot Cake (http://brazen20au.blogspot.com/2008/04/brazens-thermomix-carrot-cake-2-cups.html)
I have lots of assorted nuts at the moment so might do the almond one... how hard is it to blanch the skin off (can i do that in the TMX!!!! :2lol)
But does anyone have a good recipe they want to share?
Oh, this one (http://thepassionatecook.typepad.com/thepassionatecook/2009/11/carrot-apple-cake-with-cream-cheese-lime-frosting.html) sounds good (although i think i just like the sound of the icing and i have no cream cheese anyway....)

No, but a tip.... the pineapple carrot cake in the EDC doesnt work for me, and in fact is not real nice at all IMO.

I made a super yummy carrot/apple/almond cake. Had some for afternoon tea and it is now sporting three great big holes where Jordy decided to poke his finger way right down into the cake.

Find a good cake recipe and convert it. That's what I am going to do.... You don't need to rely on TMX recipe books at all.... It will convert easily, especially if it is a one-bowl cake

i think we should start a TMX thread for everything so that i can stop searching for recipes and just live here! LOL!

i omit the pineapple from the tmx everyday cookbook carot cake recipe too.
without the pineapple its a great recipe!

Are you on the tmx forum? They have heaps of stuff there plus there are a heap of tmx bloggers out there too :)

I made Bron's carrot cake (the second link in your first post) - did NOT work for me. Yuck.

I am going to try the carrot and apple cake you posted....and re: your recipe (also now in my cookbook :) ) what do you reckon I would do if I didn't add the almonds? Just omit or add something else? Can't eat nuts....

i reckon just leave them out. I only put them in cos i had them and it was only a small amount so would make no difference IMO.
